Pakistani vs. Indian vs. Syrian cumin

  • Indian (Gujarat) cumin — largest global volume. Typical volatile oil 2.5–4.5%. Higher variability in cleanliness. Benchmark price.
  • Syrian cumin — smaller, elongated seed; often premium flavour profile. Supply constrained since 2012. Erratic availability.
  • Pakistani cumin (Balochistan & South Punjab) — shape between Indian and Syrian. Volatile oil 2.0–3.5%. Cleanliness similar to Indian Europe-grade. FOB price typically 5–12% below equivalent Indian.

  • Volatile oil: 2.0–3.5% (Pakistani); 2.5–4.5% (Indian)
  • Moisture: ≤ 10% (ideal 8–9%)
  • Total ash: ≤ 9.5%
  • Acid-insoluble ash: ≤ 1.5%
  • Admixture (other seeds, stems): ≤ 1% (European), ≤ 2% (Singapore)
  • Insect fragments: ≤ 100 / 50 g (ASTA)

Seasonality: Pakistani cumin harvests in March–April. FOB prices are softest April–June and firmest November–February. If you can pre-book at harvest, expect 8–15% better pricing.
